1 1/2 cups self raising flour, sifted
3/4 cup caster sugar
125g butter softened
1 tsp vanilla extract
1/2 cup milk
1 apple cored and thinly sliced
3/4 cup fresh or frozen blueberries
2T demaerar/raw sugar
Preheat over to 160c. Place flour, sugar, butter vanilla, eggs and milk in a bowl and beat with an electric mixer until just combined Spoon mixture into a 22cm springfor tin lined with no-stick baking paper. Top with apple and blueberries and sprinkle with sugar. Bake 45 mins or until cake is cooked when tested with a skewer.
This is my ‘go to’ recipe when I need to make something in hurry, and I always get great feedback.
