Thermomix – Creamy tomato and salami fettuccine

INGREDIENTS  

50gm parmesan cheese

1/2 brown onion

1 garlic clove

1/2 red capsicum, roughly chopped

100g zucchini, roughly chopped

30g olive oil

400g Roma tomatoes, quartered

300g water

200g full fat pouring cream

1T TM vegetable stock concentrate

250g dried fettuccine pasta, broken in half

100g salami or favourite meat

 

METHOD

Place onion, garlic and parsley into mixing bowl and chop 3 sec/speed 7.  Scrape down sides of bowl.

Add capsicum and zucchini and chop 3 sec/speed 5.  Scrape down sides of bowl.

Add oil and saute 3 mins/Varoma/Speed 1.

Add tomatoes, water, cream and stock and cook 10 min/100c/speed 1.

Add fettuccine, ensuring it is completely submerged in the sauce.

Cook 7-10 mins/100c/reverse/stir function

Serve topped with fresh salami or ham, or bbq chicken.  Sprinkle with grated parmesan.

 

COMMENT

This will make 4 portions.  I halved the recipe to make enough for the 2 kids (and a bit left over for baby Luke to munch on).
