TEST KITCHEN: Ricotta Pancakes

 

Welcome to our new Test Kitchen segment.  This is where I try a new recipe and see how it turns out in comparison to the wonderful recipe book pictures, and share feedback from the family.   Expect the good, the bad and the ugly!

 

 

INGREDIENTS  

250g ricotta, plus extra to serve

1T caster sugar

1 egg

250g milk

150g self raising flour

maple syrup and fresh fruit of your choice to serve

 

CONVENTIONAL METHOD

Place all ingredients (except maple syrup and fruit) in a bowl and whisk or beat until smooth.

 

THERMOMIX METHOD

Place all ingredients (except maple syrup and fruit) into bowl and mix 10 sec/speed 4.

 

Place tablespoons of the mixture into a hot non-stick frying pan. Cook 2-3 minutes or until golden brown underneath, then turn over and cook a further 2-3 mins.

*Suitable for freezing

COMMENT

Unlike other pikelet/pancake recipes, these still taste good the next day after being in the fridge overnight.

These were delicious, and a huge hit with everyone… better yet dead easy to make.
