cook ONCE eat TWICE: I am addicted to this recipe, one for its ease to make, two because it is incredibly tasty and three, because I can use it in so many different ways.
2 red onion diced
4 cloves crushed garlic
1 small jar jalepenos diced
2x 400g tinned tomatoes
2x 400g Heinz Chilli Beanz
2 tsp smoked paprika
1/2 tsp chili powder
4 chicken breasts
Place all ingredients into your slowcooker, making sure the chicken is covered by the mixture and cook for 4-6 hours on low level.
Serve with brown rice and sour cream.
*note, this can also be baked in the oven for 3-4 hours on 150 degrees.
The left over chicken (pulled) and sauce makes an amazing taco. Serve in heated taco shells, with cheese, lettuce and sour cream, but you may also like to add tomato, cucumber or avocado. (It’s also just as tasty in a flour tortilla, or over nachos).
MAKE IT KID FRIENDLY
This is a little too spicy for our kids, but you can tame it by omitting the chilli powder and exchanging the Heinz chilli beans for a healthier can of mixed beans.
I have used the leftover chicken, without the sauce in their taco’s without an issue (I just use a mild salsa instead for them).
