BBQ meal plan

The weather is slowly cooling, and Easter is almost here.  So make the most of your chance to BBQ and try out these tasty new recipes.

Fillet steak with Truffle butter, Beetroot salad, Rice Salad and Baked Jacket Potatoes, served with garlic bread or fresh crusty rolls.     This is so easy to put together when you are entertaining a large group, as much of it can be done ahead of time.  The Truffle butter may sound decadant, but with so many affordable truffle products on the market now, you can treat yourself.

Truffle Butter

All you need is butter, truffle salsa, and salt and refrigerate until you are ready to serve your BBQ fillet steak.

Beetroot Salad

This recipe can be made the traditional way or using a Thermomix.  The dressing on this salad is just sooooo more-ish.

Rice Salad

I first tried this at a friends house earlier in the year, and now I am hooked.  I make it all the time, and have also given the recipe away.  There is a really tasty combo of capsicum, currants, nuts, seeds and herbs along with the rice of course.

Baked Jacket Potatoes

Could a potato dish be any simpler, yet still so tasty?  Prick each potato with a fork a few times, wrap in tinfoil and cook for 2-3 hours on 150c for fluffy white centres.  Serve with just butter and sea salt flakes, or a combination of fresh chives, sour cream, grated cheese, spring onion and crunchy bacon bits.

….and finally for something sweet – these recipes are all crowd pleasers, serve just one, or a combination.

Clinkers Rocky Road and Salted Caramel Ice Cream are my ‘go to’ dishes at the moment – but you may also like some of these other sweet treats below.  See links below for recipes.
