Brown Rice Salad




1 cup brown rice

6 spring onions

1 red capsicum (diced)

1/3 cup currants

3/4 cup of roasted cashews

2 T roasted sunflower seeds

3 T chopped flat parsley

6 T soy sauce dressing (or to taste)



3/4 C olive oil

2 T lemon juice

4T soy sauce

1 garlic clove crushed

Salt and Pepper to taste




Place dressing ingredients in a jar and shake well.

Cook rice for 30-40 mins. Rinse and drain well.

Chop onions and add to rice whilst still warm.

When cool, add capsicums, parsley and soy dressing.

Add currant, cashews and sunflower seeds when ready to serve.







I first had this at a friends house, and it was so delicious I asked for the recipe straight away.  Since then it has become my go-to recipe when having a BBQ (along with the Beetroot salad).. and I cannot tell you the amount of people who have now asked me for the recipe.  Thanks Fausta for sharing the joy!
