By Adventures of a Foodie Therapist with Four Teenagers (read the story behind this recipe here).
100g of butter
½ cup of sugar
1 tablespoon of milk
1 splash of proper vanilla
2 – 3 ripe bananas
1 ½ cups of SR Flour
½ teaspoon of bi carb
Cream butter and sugar.
Add eggs separately and beat after each addition
Add mushed up bananas ( ½ cup of sultanas are good too )
Add milk with Bi Carb dissolved
Add flour slowly mixing with a wooden spoon after each addition.
Bake in a 180 degree oven for 40 minutes.
I top this with sugar syrup and cinnamon or you could use the cream cheese Icing ( recipe on the Philadelphia Cream packet ).
