All Things Food: Raspberry Cheesecake Brownie





200 g dark chocolate drops

150 g butter

3 eggs

1 cup castor sugar

1 tsp vanilla paste

1/2 cup plain flour

1/4 cup cocoa


1/2 cup castor sugar

250 g cream cheese

1 egg

1 cup raspberries, I use frozen



  • Preheat oven to 180 degrees
  • Grease & line tin (28 x 22 cm)
  • Place chocolate & butter in a double boiler & melt until combined
  • Place eggs, sugar & vanilla in a mixing bowl & mix until thick & pale
  • Pour chocolate mixture into egg mixture & combine
  • Add flour & cocoa to chocolate mixture & combine
  • Pour into tin & bake for 8 minutes
  • Mix cream cheese, sugar & egg until smooth
  • Add raspberries & combine
  • Pour over the top of the brownie & return to the oven for 25 minutes
  • Allow to cool before cutting
